Despite its name, honey processed coffee has nothing to do with bees or honey. The term refers to a specific method of processing coffee cherries, where the mucilage (the sticky, honey-like substance surrounding the coffee bean) is left on during the drying process. 

The Processing Method

The honey process can vary, but it generally involves the following steps:

  1. Harvesting: Ripe coffee cherries are hand-picked to ensure the highest quality beans are selected.
  2. Pulping: The outer skin of the cherry is removed, but the mucilage is left intact.
  3. Drying: The beans, still coated in mucilage, are spread out to dry. The drying can be done in the sun or in mechanical dryers, often with frequent turning to ensure even drying.
